Shinshu Soba

Nagano Prefecture has the ideal conditions for growing buckwheat, and most of Japan's buckwheat is produced in this region.
The buckwheat from the Suwa region is called "Shinshu soba," named after the old name of Nagano Prefecture.
It is characterized by its elasticity and strong aroma.

Unajū
